SETE
With a direct link to the sea, with cuisine that is more personal than Séte cuisine, by a chef owner trained in Parisian brasseries and who came to join us in the Languedoc sunshine five years ago. The setting is that of an understated bistro (nothing around, little street entertainment) but the menu always has an interesting tale to tell, with aromas and flavours of the south: pan-fried squid on sobressada risotto with ink and bottarga spiced stock (a dish that has been on the menu regularly for several years), semi-cooked and raw tuna steak with poppy seeds, chocolate fondant cream with candied liquorice… The impression, sometimes fleeting, of false complication, is that of cuisine that has the merit of engaging, far from the folklore.
