Ceviche, a specialty of marinated raw fish, is said to have its origins nearly 2000 years ago, in the coastal regions of Latin America. But according to historical sources, its true geographical origin, Peruvian or Ecuadorian, would seem more difficult to establish with certainty. Whatever it really is, all these localities have shared a common cultural and culinary heritage since the pre-Columbian era which makes Ceviche a legendary dish on this continent (June 28, official Ceviche day). These original marinated raw fish recipes consist of simple and tasty ingredients, a mixture of fruits, citrus fruits, vegetables, aromatic herbs and spices. The combinations of fish, crustaceans, cephalopods, etc. “leche de tigre” marinades are endless and evolve according to the seasons and the market.
